
If you have picked too many blueberries from the forest, and you do not know what to use them for, these chocolate blueberry cookies could be a good option.
The cookies can be made both with fresh and dried blueberries. Try making half of the cookie dough with dried blueberries and half with fresh blueberries.
The advantage of using the dried blueberries is that the cookie becomes extra crispy when it comes out of the oven. Moreover, it is super easy to dry the blueberries yourself.
On the other hand, the fresh blueberries have an intense taste of blueberries. Both versions should definitely be tried!
Blueberry cookies with fresh and dried blueberries and white chocolate
Ingredients
Cookies
- 150 grams (3/4 cup) butter, softened
- 200 grams (⅞ cup) sugar
- 1 teaspoon coarse salt
- 2 eggs
- 1 deciliter (3/8 cup) milk
- 300 grams (2 1/8 cups) all-purpose flour
- 2 teaspoons vanilla sugar
- 2 teaspoons baking powder
- 200 grams (1 cup) of white chocolate, chopped
- 1 deciliter (½ cup) fresh blueberries
Dried blueberries
- 2 deciliters (1 cup) , fresh blueberries
Instructions

- Pour the fresh blueberries onto the parchment paper and spread out in one layer. Let the blueberries dry at 75 degrees celsius (165 degrees Fahrenheit) hot air for about 3-6 hours.
Cookies
- Preheat the oven at 225 degrees celsius (430 degrees Fahrenheit).
- In a large bowl, whisk together butter, sugar and salt until it has a fluffy consistency. Add eggs and milk and stir well. Mix flour, vanilla sugar and baking powder, and carefully stir it carefully into the butter mixture.
- Take half of the dough away and put it in a new bowl. In one bowl, add the dried blueberries and in the other bowl add the fresh blueberries. The white chocolate is chopped and divided equally in both bowls. Gently stir in the chocolate and blueberries into the two doughs.
- Shape small portions of dough using two tablespoons and spread them out on parchment paper with good distance to each other.
- Bake both types of cookies in the oven for approx. 7-8 minutes, depending on the sizes.
